Today's post is not a creation of mine, but rather a fun dish that I got to try on a recent trip to Prague. I have eaten many cucumber salads before, especially since it is one of my favorite vegetables, but none presented quite like this: cucumber spaghetti! It consisted of just four simple ingredients, cucumber, pesto, sun-dried tomatoes, and toasted sesame seeds. If it were presented as an ordinary salad, it would have been a typical day's lunch. But presented as spaghetti, it was exciting, new, and creative.
In this presentation, the experience of eating the cucumber was completely evolved. Since it felt like eating pasta, it tasted heartier and richer. I saw it as a perfect example of how much of an impact presentation can have on taste and the experience of eating. A little motivation for the edible art that I will post here on my blog!
I was lucky to have the chance to try it in the first place. I was dining with my husband, who really isn't a fan of cucumber. (Don't ask me how someone could not like cucumber...) We usually share meals at restaurants, and he certainly wasn't keen on this one. I am glad I convinced him though, as it was one of the best salads I have ever had. Plus, since he doesn't like cucumbers, I got the whole thing to myself!

At Maitrea, be sure to try the spinach crepes filled with eggplant! Who knew that I would find so much fantastic vegetarian food in Prague? :)
