Banana-jama



I am one of those people who grocery shops once a week and eats a banana a day. The result? I always end the week with 1-2 super ripe bananas. I often do milkshakes or try banana bread (I am still searching for the perfect eggless recipe), but I am always looking for new over-ripe banana ideas. My latest discovery: banana jam!

This time, I made little crostinis with the jam and decorated with Nutella. Banana jam...pieces of bread...a new take on banana bread?? Here is the recipe for the jam:

Ingredients--per medium sized ripe banana:
1 banana
1 tbsp butter (unsalted)
1 tbsp fresh lime juice
1.5 tbsp brown sugar
1 tsp ground cinnamon

The process:
1. Mash up the banana. If it is ripe enough, you can do this directly in the pot using a wooden spoon. If not, chop/mash using a knife or blender before putting it in the pot. Make sure your pot is quite a bit larger than your banana volume, as it may splatter while boiling.
2. Add the butter, sugar, and lime juice
3. Heat on a Low-Medium setting till it boils and maintain a slow boil for about 10mins. You will have to boil it for longer if you are using more bananas. Basically, boil it till enough liquid evaporates and it starts to have the consistency of jam. Stir often so that the mixture does not burn.
4. Add the cinnamon, and you are done!
5. Store airtight in a jar or in Saran wrap, and keep in the fridge. You will add a least a week of shelf life to your over-ripe banana!

For the crostinis I toasted thin slices of French bread till brown, and spread the jam on them. It tasted great with the Nutella!
